Owner Gary Hines says he opened Stripes as a way to celebrate the legacy of his father who served in the U.S. military. Location? Check (it’s near the VA Hospital and Kirtland Air Force Base). Menu? Check (the comfort foods have names like Alpha Bravo and Charlie and the menu has fun trivia designed to teach young diners about servicemen). Heart? Double-check (Hines gives a percentage of profits back to the VA). Oh the food you ask? Well Hines was the founder of ABQ’s Twisters fast-food chain which was known for its creative menu (he sold the chain in 2015) so obviously the kitchen portion of Stripes—which serves only breakfast and lunch—is in good hands. The star attraction is the giant fluffy buttermilk biscuits but the selections also include hearty breakfast fare and New Mexican favorites.
