Some (including the man himself) have described owner Frank Barela Sr. as “obsessed” with preparing the best chile in New Mexico and if this red is any indication it’s a personal mission he’s taking seriously. The pods are soaked in a spice blend before being blended and strained—though never touched with cumin or flour to preserve the integrity of the chile’s flavor.
