Now in his second year at this Downtown contemporary Spanish cuisine restaurant Quiñones continues to wow patrons with an array of creative tapas. Whether its lamb elk venison rabbit or other exotic meat diners never walk away disappointed. “When you give it to the guest on the plate they’re able to tell the craftsmanship that went into the dish” he says. One of his current favorites is called “Secreto” named for the meat hidden between the shoulder blades of the Iberian Black Pig in Spain. The imported pork—known for its heavy marbling—is seared and served with a caramelized onion jam on sourdough bread with oregano oil. “It’s a signature dish” says Quiñones who has appeared on The Food Network shows “Chopped” and “Cutthroat Kitchen.”
